Ginger Garlic Steamed Vegetables

INGREDIENTS:
  • 1 large head cauliflower, cut into bite size florets
  • 1 red bell pepper, seeded and sliced
  • 2 cups sugar snap peas
  • 2 green onions, chopped in 1" pieces
For the vinaigrette
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp. unseasoned rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp. minced fresh ginger
  • 1/2 tsp chilli pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp ground ground black pepper
  • 1/4 tsp Chinese 5 spice (optional)
To garnish
  • Chopped fresh cilantro or parsley
DIRECTIONS:
  • Place the cauliflower florets in a steaming basket and steam them over simmering water for 5 minutes or until tender but still retains a crunch in a bite.
  • Add the bell peppers, sugar snap peas and green onions over the cauliflower and continue steaming for an additional minute.
  • While the vegetables are steaming, combine all the ingredients for the vinaigrette and whisk vigorously until well combined.
  • Carefully transfer the steamed vegetables to a service plate, drizzle with the vinaigrette and sprinkle with chopped cilantro or parsley if desired.
  • Serve immediately.
